The fine folks from J&J Snack foods sent me some coupons to try some of their frozen treats. Upon indulging on a coconut bar, I had a flash of inspiration. Could I make a frozen concoction from this frozen treat?
Oh, I dared.
Two coconut Whole Fruit bars mixed with pineapple, key lime juice and a judicious smattering of rum later…et voila. The Whole Fruit Pina Colada.
Decadent, daring, delicious. It’s just as good as a virgin beverage, so no worries of you don’t indulge.
Grab the recipe below!
- 2 Coconut Whole Fruit Bars
- 2 oz. Dark Rum
- 1 6 oz. Can Dole Pineapple Juice
- 1 oz. Nellie and Joe's Key Lime Juice
- Fresh Pineapple Slice
- Maraschino Cherry
- Add bars, rum, juice, and a handful of ice into blender.
- Blend until smooth.
- Pour into a cocktail glass.
- Garnish with fresh pineapple and a maraschino cherry.
Lots of chunks of yummy coconut, and the perfect balance of sweet and tangy!
Perfect for a hot summer afternoon.
