After baking our Fresh Strawberry Cupcakes, I had a glass full of strawberry puree leftover. Not being one to waste perfectly delectable berries, I decided to make some Fresh Strawberry Daiquiris. I played around with the ingredients to get the perfect flavor combination, and we all agreed this was it. There’s a lot of research and development in our cocktail creations, but let’s face it, that’s the fun part.
Sweet, tart, tangy, and berry-licious! This is my take on the quintessential summer classic…with a twist!
- Strawberry Puree:
- 1 Pint Fresh Strawberries
- ½ cup confectioner's sugar
- 2 oz. white rum
- 2 oz. sweet and sour mix
- 3 oz. strawberry puree
- Splash key lime juice
- Splash simple syrup
- Use a food processor to puree 1 pint of fresh strawberries. Press through a strainer to remove most of the seeds. Heat this on medium with ⅓ cup of confectioner's sugar. Cool. (Note: This will be enough for several drinks.)
- Mix 2 oz. white rum, 2 oz. sweet and sour mix, 4 oz. puree, a splash of key lime juice, a splash of simple syrup in a blender with a cup of ice. This will make a hurricane glass worth of beverage with some spare for refill. Hooray!
Garnish as you please, we used a cocktail umbrella and a festive straw!
Adjust the sweet/sour to your taste. We like it tart around these parts!
