Key Lime Cupcakes

  • (All ingredients room temperature, except for milk)
  • 1½ cups cake flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ⅔ cup sugar
  • 1½ sticks unsalted butter (melted)
  • 2 tsp vanilla extract
  • 2 tsp key lime zest
  • ½ cup milk
  • 1 tbsp key lime juice
  • 1 cup confectioner's sugar
  • 1 tbsp key lime zest
  • ¼ cup key lime juice
  • All ingredients at room temperature
  • 3 cups confectioner's sugar (we like ours a little less sweet, but most recipes call for 4 or more cups, adjust according to your taste buds)
  • 1 stick butter
  • 1 package cream cheese
  • 2 tsp vanilla
  • 2 tsp key lime zest
  • 2 tsp key lime juice
  • Neon green food coloring (about 12 drops)
  • Topping!
  • 4 tbsp sweetened coconut

  1. Preheat oven to 350.
  2. Fill cupcake tray with liners.
  3. Zest lime.
  4. Sift flower, baking powder, and salt.
  5. Blend eggs and sugar on medium high with mixer until they are light and fluffy. Gradually incorporate butter and vanilla.
  6. Turn mixer on low. Add flour in two segments, alternating with milk. Don't over mix, you just want to incorporate the dry and wet ingredients.
  7. Spoon mix into cupcake liners evenly.
  8. Bake for approximately 15-20 minutes, turning tray midway through baking.
  9. Don't over bake! A knife or toothpick inserted into cupcake should come out clean, cupcakes should be domed and light golden brown.
  10. Cool completely before decorating.

  2. Blend confectioner's sugar, zest, and juice thoroughly.
  3. Brush over cooled cupcakes with a silicon pastry brush.

  3. Add lime zest and juice, blend.
  4. Add powdered sugar one cup at a time, blending thoroughly.
  1. Place coconut in a plastic bag.
  2. Add food coloring.
  3. Mix thoroughly by shaking and squeezing the color into the coconut.
  4. Sprinkle on cupcakes, accent with a slice of key lime.
